Meal Plan Monday

I am looking to have a wonderful week as I plan and think about what lies ahead.  I am enjoying this spring like weather and wearing capris and flip flops- LIFE IS GOOD!! So here is what I plan to take to the table this week. 
1.  Big Breakfast Dinner with gourmet omelets, hash browns and biscuits
2.  Green Chile Enchiladas
3.  Spaghetti
4. Hamburgers and home fries
5. Bacon Tortellini
Dessert: Apple Pie and Ice cream

Here is a recipe a dear friend gave to me which I changed alittle to go with our tastes which you are welcome to do the same.
STACKED Green chile Enchiladas
Approx. 2-3 Large Chicken Breasts
1 Large can of cream of mush soup
1 C or 8oz of Chopped Green Chile
1/4 C chopped onions- we don't like too much
Large stack of corn tortillas- 3 dozen
salt
Oil
Garlic to taste
Cheese

Boil Chicken with some salt.  Shred chicken and keep broth from chicken.  Put a little oil about 2T in a sauce pan, add diced onions, garlic and green chili and seasonings cook til transparent.  Throw in soup and about 1/2 c of broth from chicken in pan and mix together.  Fry tortillas in another pan of oil.  In a 9x13 pan, layer tortillas, sauce, chicken, cheese, and more onions if you want them.  Bake at 350 for about 30 min until cheese is bubbly.
